Egg muffins

 

·   12 eggs

·   125g bacon

·   200g tasty cheese

 

·   Fresh coriander

·   salt

 

 

 

1.Grease a muffin tin with butter or coconut oil.

2.Preheat the oven to 175▫C.

3.Chop up bacon and coriander.

4.Add butter /coconut oil to a small frypan and cook bacon. Once cooked remove from stove.

  1. Add eggs, tasty cheese, coriander and salt to a mixing bowl. Stir till well combined.

6.Add cooked bacon to the bottom of each section of the muffin tin.

7.Poor mixture on top of the bacon.

8.Bake for 15-20 mins.

 

Note – This makes approximately 6 muffins dependent on size of muffin tray used. This recipe could easily be modified.
